Biography

Peter Brunel is the chef and owner of the Peter Brunel Ristorante Gourmet in the small Italian town of Arco, near Lake Garda. A Michelin - starred establishment, the restaurant offers dishes that blend the traditions of his native Trentino with global gastronomy - specifically Peruvian-Japanese, or "Nikkei," cuisine. The tasting menu features lake - sourced ingredients, Mediterranean food and creative vegetarian dishes such as cabbage risotto. Born in 1975, Brunel moved to Bolzano after completing his studies at the hospitality school in Tesero; there, under the mentorship of Chef Giorgio Nardelli at the Parkhotel Laurin, he took his first steps into the world of fine dining. He subsequently moved to the Villa Negri restaurant in Riva del Garda, where he earned a Michelin star at the age of just 28. In 2012, he launched the "Chef’s Circus" - a series of gastronomic events where Michelin - starred chefs combine their culinary creativity with live jazz performances.

As a member of the Italian national chefs' team, he showcased his work in food design as part of the traveling exhibition "The New Italian Design," organized by the Triennale museum in Milan. The exhibition toured Istanbul, Beijing and the United States. In the summer of 2014, in Florence, he assumed the role of Executive Chef for the "Lungarno Collection," owned by the Ferragamo family. There, his cuisine took on fusion characteristics. In December 2015, just over a year after his arrival, the Borgo San Jacopo restaurant - located mere steps from the Ponte Vecchio - was awarded a Michelin star.

In July 2019, the chef opened his gourmet restaurant, Peter Brunel - a new project and adventure launched in collaboration with Lorenzo Risatti, an entrepreneur driven by a passion and love for fine food. It is a challenge aimed at promoting the Trentino region, with the desire to breathe new life into this resource-rich area.
