Biography
Few chefs in Croatia know the wealth of the sea so well and use it in their kitchen in the way that does chef Zlatko Marinović, the owner of the restaurant Noštromo in Split. The name of the restaurant became the nickname of the chef, who is one of the legends of the Dalmatian gastronomic scene. A former passionate diver, he transforms halibut, sea urchins and shells into imaginative rhapsodies on the plates, and he often creates the menu according to the daily offer of fresh fish, his own mood and the wishes of his loyal guests.
Numerous accolades from the Croatian Chefs Association, as well as the title of Silver Chef of the Mediterranean in 2006, testify to his quality and dedication to work. And the international gastronomic guide Gault&Millau Croatia 2021 awarded him the Tropphy Chef of the modern traditional cuisine, while the restaurant Noštromo, according to the same guide, has been among the best restaurants in Croatia for years.
In the small, elegant space of his restaurant, located right next to the Split fish market, they always have immaculate white tablecloths and fresh roses on the tables, while on the walls hang valuable works by modern Croatian painters that the chef, a passionate art collector, has been collecting for years.
Chef Marinović is also a judge of WACS – the world’s chefs association, and he is particularly proud that the culinary tradition of the Marinović family is being continued by his grandson Stipe, who will also assist him at this year’s Taste the Mediterranean Festival.
