Biography

Chef Paul Ivić is one of the pioneers of haute vegetarian cuisine. His restaurant TIAN, in Vienna, was the first vegetarian restaurant in Austria to receive a Michelin star, and the prestigious gastronomic guide Gault&Millau awarded it 4 toques. Paul Ivić was born in the Austrian Tyrol, but he has Croatian roots, which he likes to emphasize, and he sincerely enjoys Croatian cuisine and its indigenous ingredients. This was one of the reasons why, during the summer months, chef Ivić runs the TIAN am Meer pop-up restaurant within the Falkensteiner Iadera Hotel in Petrčani, near Zadar.

“What my team and I do is much more than just minimizing vegetarian cuisine. Food is much more than just nourishment. When we talk about food, we also talk about responsibility for the sources of food and about responsibility for all the people who work hard to grow these foods. Food connects people, it doesn’t need a special language to communicate – it just needs a soul” – this is how chef Ivić looks at food.

In addition to the TIAN restaurant, he spreads his culinary philosophy through another Viennese location – TIAN Bistro am Spittelberg. He recently closed his TIAN restaurant in Munich, but chef Ivić and his team did not end their activities in Germany. They still sell products from the TIAN zuhause line there, and they run the winter pop-up restaurant TIAN Bistro am Berg within the Edelweiss Hotel in Zürs am Arlberg, in the German Alps.
