Nicola Fossaceca

Born in 1983, Nicola Fossaceca is the chef of the restaurant al Metrò, in the small town of San Salvo, a summer resort in the southern Italian region of Abruzzo, opposite Dalmatia. Together with his brother Antonio, he took over the family patisserie and turned it into a place where the passion for local cuisine and the skills matured and refined over years of experience converge. The success was confirmed in 2013 by the prestigious Michelin star.

It was a long-desired leap to fame that allowed the restaurant to open up to a wider and more international audience. Nicola Fossaceco learned from the best chefs: Mauro Uliassi, Antony Genovese and Norbert Niederkofler. Then in his professional life there is Niko Romito. Although there was no opportunity to work together, he is for Nicola a constant source of contamination, comparison and growth.
