Biography
Jure Tomič, the Slovenian chef and sommelier whose name is now known throughout the world, was born in 1981 in Brežice. After finishing a study programme of food and nutrition, he completely devoted himself to gastronomy. He gained his experience in a number of small restaurants, and then opened a family restaurant Ošterija Debeluh in Brežice. Awarded the Trophy of the Great Chef of Tomorrow by Gault&Millau Slovenia, Jure is a distinguished member of JRE and his restaurant has 4 Gault&Millau toques and a Michelin plate.
Jure’s cooking philosophy derives from the respect of the local tradition while reinventing the dishes through an innovative approach to cooking and the use of fresh, local ingredients. His simple dishes surprise with the purity of taste and daring combinations. Only three to four ingredients usually dominate in the plate, however, always of premium quality and mostly locally grown. His plates are equally creative and traditional while flirting with global trends and he is an expert of cooking on an open fire that he raised to a high level.
Chef Tomič participated in the Expo Milan in 2015, while in 2016 he was the winner of the Barilla Pasta Word Championship with his dish “Fusilli integrali, goat cheese and pumpkin”. Few years ago he received the prestigious Service Award in Europe out of 330 members of JRE. Every year he visits several food festivals, culinary conferences and competitions – where he finds inspiration and ideas for creating unforgettable new experiences in his restaurant.
