Biography

The passion for the sea, fish and seafood can be felt in every dish of chef Hrvoje Zirojević. Dalmatian cuisine, as an integral part of the Mediterranean story, is an inexhaustible source of inspiration for him. He uses his perfect knowledge of food and flavors combined with creativity to create a unique experience.

His sardines in savour are not only a visual attraction, but also an exceptional rhapsody of flavors concentrated in this tiny blue fish. Fans of authentic gastronomy from all over the world come to the Dvor restaurant in Split, where chef Zirojević has been cooking for the last three years, for tuna carpaccio rolls filled with goose liver ganache or smoked risotto with ice cream made of caramelized cheese.

Inspired by others as little as possible, to respect the traditions of the terroir, and be original in your performance, is the creative motto of the long-time ambassador of the gastronomic festival Taste The Mediterranean. These are the fundamental values that he conveys to younger generations as a lecturer at numerous training courses. Due to this approach to cooking and the refined presentation of dishes, Chef Zirojević won the Trophy Chef of the Year 2019 by the prestigious Gault&Millau Croatia guide.
