Biography

The story of the talented chef behind the success of the Foud restaurant in Marseille is a real gastronomic epic, shaped by unique experiences and discoveries around the culinary world. Fred Charlet began his journey in 1999, after studying in Marseille, in the renowned restaurant “Le Petit Nice” with 1 Michelin star. Curiosity then led him to “La Bastide de Moustier”, where he learned to arrange the carte according to the products, adopting a unique menu with fresh and local ingredients, especially those from the vegetable garden. Fred then went to Paris to work at “Spoon”, where chef Christophe Moret introduced him to fusion cuisine and the flavours of the world. After the traveling period, he returned to France where he became the chef of the Brasserie of the Olympique de Marseille. The year 2011 marked a major turning point with the opening of his own restaurant “Bristo du Cours”, in collaboration with Laurent Biaggi. The innovative concept and retro cuisine with a touch of modernity quickly seduced the guests. He was soon awarded the Michelin BIB Gourmand and won 3 Gault&Millau toques and a score of 15/20. The success was crowned by the victory in the TV programme “Mon Bistrot Préféré” on channel M6. During the pandemic, together with two partners, the chef opened the restaurant “FOUD” in order to satisfy the need for “comfort” food for delivery or to take away. The concept of authentic, creative and good food prepared with love, quickly gained popularity. For Fred, the future of “FOUD” is anchored in continuity: the cuisine of yesterday for the people of today.
