Biography

With the complicity of his wife Paola, Franco Favaretto, a born chef, has transformed his restaurant Baccaladivino in Mestre into an unmissable place for the lovers of stockfish or Baccalà, as they call it in Italy. The restaurant has its roots in the local gastronomic tradition, with the aromas and the flavours of the Venetian cuisine. Here you can enjoy in the reinterpretations of cod dishes in all its forms and flavours.

A passion that led Franco to be one of the founding members of the “Dogale Confraternita del Baccalà”. Born in Mestre in 1961, Franco Favaretto spent his childhood in the family ice cream shop.After attending the Maffioli hotel institute in Castelfranco Veneto, Franco has been managing the family restaurant, a historic pizzeria in Mestre, for 30 years, before transforming it in Baccaladivino. He has been working as a chef for 40 years, even though he likes to define himself as a “cuisine craftsman”,Ambassador for the culture and diffusion of stockfish in the world for Norge (Norwegian commission for fish products), he exports his knowledge from one continent to another.

For years he has been a teacher at ALMA International School of Italian Cuisine, where he holds his lesson on stockfish and cod, from fishing to cooking.
