Biography

Filip Matjaž is the 5th generation of restaurant owners in the Matjaž family. Although he never went to culinary school, Filip graduated in the field of Istrian gastronomy at The Faculty of Tourism Studies – Turistica. Before opening his restaurant COB, he gained culinary skills working and managing his family’s now closed restaurant, Tomi. He also interned in several Michelin star restaurants abroad. For many years

Filip has been a valuable member of the Slovenia Junior Culinary Team and has won several Culinary World Cup and Culinary Olympic medals. At the 2017 edition of the European Young Chef Award held by IGCAT in Barcelona, Filip was awarded the 3rd place medal and became a regional ambassador of Slovenia – European Region of Gastronomy 2021. In 2020 chef Filip and restaurant COB were also awarded the Green Key eco-label for their high environmental standards in gastronomy. COB was also included in the Green Scheme of Slovenian Tourism recognizing their efforts in sustainability and green practices. Through their commitments COB was awarded the Green Cuisine Label by the Slovenian Tourist Board. In 2022, Filip’s culinary vision and skills were recognized by important international restaurant guides. He was awarded Chef of Tomorrow by

Gault&Millau Slovenia. He also became the youngest chef in Slovenia and the first chef on the Slovenian coast to earn a Michelin star.
